The key ingredient is vital wheat gluten, which you can easily find on Amazon. It creates a smooth, elastic texture without the need to wash flour by hand. If you prefer washing your own gluten, you can use bread flour but today, we’re focusing on the fast and easy method with vital wheat gluten.
Ingredients
250g vital wheat gluten
500g warm water
3g salt
1. Prepare the Dough
Start by dissolving the salt completely into the warm water.
Slowly pour the salt water into the vital wheat gluten while mixing. At the beginning, the mixture may look soft or messy—don’t worry. Just keep pressing, mixing, and kneading until everything comes together into a dough.
The dough will not be perfectly smooth yet. This is normal.
Let the dough rest for 1 hour. You can also cover it and let it rest overnight; the texture becomes even chewier and more elastic.
2. Shape the Seitan Strips
After resting, there may be a little extra water around the dough. Simply pour off the excess.
Take out the dough, flatten it gently, and cut it into long, flat strips.
To create the signature twisted shape:
Hold one end of each strip with chopsticks, gently pull the dough, and wrap it around the chopsticks. Don’t use too much force or the strips may break. After wrapping, slide the chopsticks out.
Repeat until all strips are twisted. If you're cooking for a family, you might want to double the recipe.
3. Cook the Seitan
Bring a pot of warm water to a gentle simmer. Add the twisted gluten pieces and cook over low heat for 20 minutes. The goal is to fully cook the seitan without boiling it too hard.
Once cooked, allow the pieces to cool until they’re comfortable to touch.
Skewer each piece, then slice while rotating the skewer to create beautiful spiral cuts. Gently pull them apart to loosen the layers.

4. Prepare the Seasoned Oil
To get that rich, mouthwatering flavor, you’ll need both dry spices and aromatic oil.
Use your favorite spicy dry seasoning mix (many Asian markets sell prepared “dry chili powder” blends). Add extra salt—seitan absorbs a lot, so don’t be shy.
Now heat some oil and add aromatics such as:
onions
garlic
cilantro
Fry them slowly over low heat until fragrant and slightly dried. Then pour this hot aromatic oil over the dry spice mixture. This creates a bold, savory, deeply flavored seasoning.
5. Season and Cook
Brush the seasoned oil generously over the seitan.
You can cook it in two ways:
Option A — Oven
Bake at 350°F (175°C) for about 20 minutes.
Option B — BBQ Grill
Simply grill the skewers until they’re golden and lightly charred.
Sprinkle additional spices to taste.
