Cantonese Lap Mei Claypot Rice has always been one of my all-time favorites! It’s the perfect one-pot comfort meal — packed with savory sausage, fragrant rice, and tender veggies. Especially in winter, there’s nothing cozier than opening the lid and getting hit by that rich, meaty aroma 😋

And the best part? It’s super easy to make — no claypot needed, just a regular rice cooker!

🧺 Ingredients (for about 2 people, 2 meals)

Cantonese sausage (Lap Cheong) — 4–5 links

(I usually buy the white-oil version from Chinese supermarkets — very authentic!)

  • Rice — about 350g
  • Eggs — 2–3
  • Dried shiitake mushrooms — a few (rehydrate before use)
  • Baby bok choy — to taste
  • Oyster sauce, soy sauce, sugar, sesame oil, spring onions, chili oil (optional)
     

👩🏻‍🍳 Instructions

1️⃣ Rehydrate the mushrooms

Soak the shiitake mushrooms in hot water until soft — and don’t throw away the soaking water! You’ll need it later for cooking the rice.

2️⃣ Oil the pot

Lightly brush the rice cooker bowl with a little vegetable oil to prevent sticking.

3️⃣ Cook the rice

Wash the rice, then soak it in the mushroom water for about 15 minutes (ratio 1 part rice : 1.5 parts water). Meanwhile, prep other ingredients.

💡 Using mushroom water gives your rice an incredible umami aroma!

4️⃣ Slice the toppings

Cut the softened mushrooms into strips or small pieces, and slice the sausages thinly.

5️⃣ First cook

Turn on the rice cooker and choose the “white rice / regular cook” mode (the longest cooking mode). When the rice is about 80% done (after roughly 25–30 min), open the lid.

6️⃣ Add toppings

Place the sliced sausage, mushrooms, and crack in 2–3 eggs directly on top. Close the lid and let it cook for another 15–20 minutes.

7️⃣ Prepare the greens

Boil or blanch the bok choy separately, drain well, and set aside.

8️⃣ Make the secret sauce

Mix together:

  • 1 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp boiled or cooled water
  • ½ tbsp sugar
  • a drizzle of sesame oil
  • a bit of chili oil (optional)
  • finely chopped spring onions

Stir well — this flavorful sauce is the soul of the dish, so don’t mess with the ratios 😉

9️⃣ Combine & serve

When the rice is done, open the lid and take in that mouthwatering aroma! Mix in the greens, drizzle the sauce, and toss everything evenly before serving.

💡Tip: Use a big bowl for mixing — it’s easier than doing it inside the rice cooker.
